2 tablespoons ground flaxseed(equivalent of 2 eggs)6 tablespoons water
1 cup non-dairy butter
1 1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
2 teaspoons vanilla
1 3/4 cups unbleached all-purpose flour
1/2 cup oat bran
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
3 cups rolled oats
1 cup raisins or dried cranberry
- Preheat oven to 350.
- Place parchment paper on baking sheets.
- Whip together flaxseed and water until creamy and thick.
- Cream together butter, sugars, vanilla, and flaxseed mix.
- In large bowl mix flour, oat bran, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Add butter mixture to dry mixture and mix until smooth.
- Add rolled oats and dried fruit of choice until completely combined.
- Spoon tablespoons and with slightly greased oil roll into balls 1/2 thick.
- Bake 12-15 minutes, until slightly brown.
- Allow cookies to cool on sheet until firm then cool on wire rack.
